1. Carrot Pomegranate Salad

Ingredients (for 2-3 people)

Carrots: 2-3
Pomegranate: ¼
Salt and sugar: to taste
Lemon: to taste
The basic spice mix – cooked in oil

Instruments

Big salad bowl
Vegetable grater

Method

1. Grate carrots
2. Cut pomegranate open and remove seeds
3. Add salt, sugar and lemon if desired
4. Add the cooked spice mix and stir thoroughly
5. Add chopped, fresh green coriander


2. Cucumber Tomatoe Raita

Ingredients (for 2-3 people)

Cucumber: 2
Tomatoe: 1
Curd/ plain yoghurt
Ground peanuts
Salt and sugar: to taste
Dry, ground coriander and fresh coriander

Instruments

Big salad bowl
Cutting instruments

Method

1. Chop cucumber and tomatoes into small pieces
2. Mix with curd, ground peanuts salt and sugar
3. Add 1-2 spoons of the prepared basic spice mix and stir well
4. Garnish with fresh corriander

Variations
Try grating cucumbers alone for a cucumber raita. You can also make this or the previous salad with or without curd and use any vegetable such as cabbage, spinach, cauliflower, radish, beet, boiled potatoe etc.

3. Fresh Fruit Salad

This makes a delicious and healthy desert or snack

Ingredients

Fruits of choice: apple, chikoo, guava, banana, orange, pineapple, mango, cherry, papaya, grapes, etc…
Sugar
Salt
Curd
Saffron
Cashew nuts, almonds
Assorted dry fruits if desired

Instruments

Big salad bowl

Method

1. Cut fruits into bite size pieces
2. Add Curd, nuts, dry fruits and saffron if desired or you can just leave it plain!
3. Add sugar and salt to taste

You can mix fruits with curd or yoghurt but do not mix fruits with milk. According to Ayurvedic diet fruits and milk should not be combined.
